Blasts from the Past
Of Goats and Greens
A blog for food and cookery and discussions of weird things like nutrition, restaurant excursions, growing food in my own garden, DIY, and farmsteading/homesteading. But, mostly food. Mostly harmless...
I definitely steer to a preference for Real Food. (Would someone's great-grandparent somewhere have recognized that item as food?) Otherwise, I'm an omnivore who travels the world (gustatorially). Yes, I also make use of "odd bits". No, I don't bake desserts much -- I really don't have much of a "sweet-tooth". Nearly all of my recipes in recent years are gluten-free. And other than coconut, my recent and future recipes are tree-nut free, as I have digestive issues with those. There's a strong Paleo influence here.
I try to post recipes every Friday, with potential supplemental posts on Tuesdays.
Please leave me comments! Interacting with folk drives me forward!

Middle Eastern Style Goat Shoulder, with Baharat, Plums, Lemon, Onion and Potato
Contains: Nightshades, alcohol. Is: Gluten-free, grain-free, paleo. One can substitute out the alcohol if desired. The alcohol will cook off, but I understand not everyone wants to have this in their food. Although you can skip the potatoes (nightshade), perhaps … Continue reading
Braised Mexican Pork Loin Rib Roast
Contains: Nightshades, legumes. Is: Gluten-free, mildly spicy. Haven’t done anything Mexican recently, so I got inspired to go check out a Mexican goat recipe – and there really is such a thing, done as a stew. However, this is a … Continue reading
Sous Vide Bison Tongue: Braised & Pan Fried Style
Contains: Nightshades (but you can opt out.) Is: Offal, not awful. Gluten-free, paleo, Whole30. Yes, this post does include photos of actual bison tongues. Consider this a squeamish alert. This bison tongue was obtained from Wild Idea, a bison-raising venture … Continue reading
Lamb Shank with Balsamic Vinaigrette, Garlic, Rosemary
Contains: The dressing has honey in the vinaigrette (added sugar). Is: Gluten-free, nightshade-free, Paleo. One of my favorite parts of the lamb is the shank. And just as a note, today would have been my parents’ 68th marriage anniversary date, … Continue reading
Braised Rooster Legs with Wine and Sage
Contains: Alcohol (cooked off). Is: Gluten-free, grain-free, dairy-free, nightshade-free (the bell pepper is not part of the recipe, and is present to add color to the photography. Any salad or other side would work), Paleo. http://www.vespresso.cooking/en/2016/11/braised-rooster-legs-with-wine-and-sage-sauce Well, I pulled out … Continue reading
Slow Braised Rooster Wings – Rooster Legs: Dual Recipes
Since I did this as a test, I only cooked one Ziploc pack of wings from the recent farm-harvested roosters. It held five whole wings, and I’d left the drumette attached to the dual-bone part. For guests, separate the drumette … Continue reading
Gluten-Free, Braised, Stuffed Lamb Hearts: Featuring Cauliflower
Here is a Paleo-friendly (use Coconut aminos instead of soy/tamari sauce, and go with my Mirin substitution idea) recipe for stuffed, braised lamb hearts. They are wrapped with bacon to keep moisture in while baking. This recipe uses cauliflower rather … Continue reading
Thanksgiving: Braised Turkey Thighs
As noted in the previous post, for Stuffed Delicata Squash, I’m Home Alone this Thanksgiving, on crutches. But, by golly, we’re going to have a Thanksgiving Dinner That Can’t Be Beat, and maybe listen to some Arlo Guthrie on the way. … Continue reading
