Kale is a good, nutritious, and very tasty veggie that is simple to make.

About 3 ounces chopped kale
1 large clove garlic, chopped
1 teaspoon avocado or extra virgin olive oil
1/4-1/3 cup vegetable broth
1/2 teaspoon oregano flakes


Cook the garlic in the oil in a skillet at medium heat, just before it turns brown add the vegetable broth (homemade of course is best, but if I check the ingredient list of those boxed organic broths, some of these are acceptable).  Alternatively you can add your own homemade chicken stock if you have some to hand.

Add the kale, and let simmer at medium/medium high heat for about ten minutes, stirring frequently.  Add the oregano a couple minutes before you are done.

Drain, and reserve the broth for another use, and serve the kale.
