RecipeSwaps from… September!

Yes, I have been delayed, but what follows are my two September vegetarian recipeswaps from RecipeZaar, er,

First up: (Afghan Tomato Cucumber and Onion Salad)

Nice simple one, as befits a busy month

The only note to make on this one is that I used a variety of farmer’s market fresh tomatoes.  All sorts of visual effects.  The pile of veggies are as follows:  On the upper left, the tomatoes.  Upper center:  red onion.  Upper right:  cuke, peeled and diced.  Lower center:  cilantro.

Don’t forget to add the lemon juice.  I didn’t add any salt.

Rating:  5 out of 5.

Second recipe, from the same chef: (Cypriot Sour Lentil Soup)

Get everything diced up and into the pot as described in the recipe above (I made a half-recipe and ended eating this over about three meals).

Start simmering.  Shortly, it will look like this:

The finished soup looks like the below, and has a great texture:

Rating:  4.75 out of 5.  It really needs more spices, but I can handle that next time out.  I’ll gear towards the middle Eastern.

Btw, I did not participate in the October swap.  Not with the plans for being out of town so long!

About goatsandgreens

The foodie me: Low/no gluten, low sugars, lots of ethnic variety of foods. Seafood, offal, veggies. Farmers' markets. Cooking from scratch, and largely local. The "future" me: I've now moved to my new home in rural western Massachusetts. I am raising chickens (for meat and for eggs) and planning for guinea fowl, Shetland sheep, and probably goats and/or alpaca. Possibly feeder pigs. Raising veggies and going solar.
