Orange Beets?

As farmers’ market season largely draws to a close around these parts, one does find a few last minute things.

Here’s something simple I created using orange! beets, leeks, broccoli and Trader Joe’s vegetable broth, which if you don’t have any left of your own, is quite an acceptable substitute.  By the way, the orange beets stain things just as handily as do the red-purple variety.

Just simmer together (do the beets first; add the broccoli at the end), and serve with as much liquid as you may be in the mood for.  Oh yes, there’s garlic in there, too.  I hit up a local garlic festival recently.
