Nice simple one, as befits a busy month
The only note to make on this one is that I used a variety of farmer’s market fresh tomatoes. All sorts of visual effects. The pile of veggies are as follows: On the upper left, the tomatoes. Upper center: red onion. Upper right: cuke, peeled and diced. Lower center: cilantro.
Don’t forget to add the lemon juice. I didn’t add any salt.

Get everything diced up and into the pot as described in the recipe above (I made a half-recipe and ended eating this over about three meals).

Rating: 4.75 out of 5. It really needs more spices, but I can handle that next time out. I’ll gear towards the middle Eastern.
